Fresh Basil & Tomato Penne


Ingredients:

3 medium ripe tomato,
250 gr. penne
1 small jalapeno
1 tsp garlic powder
1 tsp coconut sugar
1/2 tsp sea salt
1 tbsp soy sauce
1/2 tbsp tomato paste
2 tbsp olive oil



Method:

1. Bring a large pot of water to boil.

2. When it boiled, add 1 tbsp olive oil and salt, stir them and add 250 gr. penne. Cook until al dente.

3. Place all other ingredients in a blender and mix until smooth.

4. Heat a large saute pan over medium high heat. Add olive oil and heat.

5. Drain the penne and add it to the sauce pan. Toss to combine.

6. Place in a large pasta plate and garnish with fresh basil or mint.
