Stuffed Zucchini with rice and cherry


8 short and small zucchini, washed,
300 ml hot water
2 tbsp olive oil
1 cup baldo rice
1 onion
1/2 tsp cinnamon
1/2 tsp mint
172 tsp allspice
1/2 cup sour cherry
A handful of black currants


1. Wash the zucchini cut off a thin slice of the top of each one and carve out its inside.

2. Place  olive oil and chopped onion in a pan, keep it on medium heat. Stir periodically until it is fried.

3. Add rice, black currants, allspice, mint, cinnamon and hot water. Stir them on medium heat for 5-6 minutes and add sour cherries, stir about 1-2 minutes. Rice should be semi-raw.

4. Start to fill zucchini with rice mixture. Cover with its top and place in a large bowl. Add hot water and cook for 15-20 minutes until the rice is tender in low heat.
