Vegan Brownie with Sour Cherries


2 tbsp flax meal
200 gr coconut flour
6 tbsp raw cacao
120 gr %99 bitter chocolate
1 cup espresso (150ml)
1/4 tsp salt
2 gr baking soda
4 tbsp agave syrup
95 gr macademia butter
2 tbsp olive oil
40 gr. nuts chopped ( optional)
100 gr. %85 dark chocolate
50 gr. sour cherries


1. Add 45 ml water to flax meal in a bowl, mix and put aside in the fridge to allow it to thicken.

2. Mix the two together; baking soda and coconut flour. Set aside.

3. Chop chocolate very finely. Put it into a big bowl with salt and raw cacao.

4. Make espresso and pour it in to big bowl, stir it well until chocolate dissolves into hot liquid.

5.  Add agave syrup and flax, using a hand mixer or blender mix until it is smooth.

6. Add  soda and coconut flour mixture and stir it into the chocolate mixture. Stir gently and just enough until there are no flour pockets anymore, but no more than that.

7. Pour mixture into the pan and cook for 20 minutes, it'll be cracked and then cut into pieces and place in to blender, mix on high. You'll get the chocolate meal in this manner.

8. Melt %85 dark chocolate and pour into the blender.

9. Pour macademia butter and cherries into the blender and add nuts.

10. Mix on high until it smooth. You will get a sticky dough form.

11. Pre-heat to oven 180 degrees. Pour the mixture in a silicone cake mold and place in the oven.

12.  Bake for 10 minutes! Decorate with cherry and raw cacao pieces.
