Mung Beans with Blueberry



Ingredients:

1 cup mung beans,
1 medium onion, finely sliced,
1 tsp sea salt,
2 teaspoons olive oil,
2 black garlic cloves minced,
1/2 bunch of parsley,
1 chili pepper,
2 green pepper,
1/2 yellow capsicum,
1/2 cup warm water,
A handful of onion chives.
60 gr. blueberry.




Method:

1. Soak the mung beans for 4-5 hours.

2. Saute sliced onions in the olive oil, garlic and salt.

3.  Cut peppers and parsley into the small pieces and add to pan, mix them for a few minutes on low heat.

4. Add mung means and stir for 1-2 minutes.

5.  Pour the warm water and add blueberries, occasionally stirring, cook it for 10-15 minutes.

6. Sprinkle a handful of onion chives on top and serve with a thick piece of  crispbread.
