Raw Quinoa Salad


1 tbsp lime juice
1 tbsp olive oil
1 tbsp pomagranade syrup
2 tbsp quinoa
A handful of broccoli and purslane
6-7 slices cucumber
Mesclun greens; Mizuna, rakula, violet, sour dock, lollo rosso, endive.


1. Soak quinoa in hot water for 6-7 hours.
2. Keep broccoli in hot water for 10-15 minutes.
3. Whisk together lime juice, pomagranade syrup and olive oil in a bowl.
4. Add greens, cucumber, broccoli and quinoa to dressing and toss to coat. Serve with olive oil and pomagranade syrup.
