Tabouli Quinoa Salad w/ Mediterranean greens


60 gr red quinoa
1 green pepper
1/2 yellow capsicum
A pinch of dill
A pinch of salt
2 tbsp olive oil
1/2 carrot
1/2 purple cabbage
2 tbsp capers
1/2 cucumber
100 gr mediterranean greens
1/2 bunch of red leaf lettuce
1 lemon juice.
1/2 bunch of parsley


1. Wash all greens and cut into small pieces.

2. Cook quinoa in hot water for 10-15 minutes.

3. Place greens in a large bowl, add sliced carrot, capsicums, lettuce and cucumber.

4. Pour olive oil, lemon juice, a pinch of salt and dill.

5. Cut the parsley and peppers into small pieces and mix with quinoa.

6. Add the quinoa mixture on the top of salad.

7. Decorate with capers.
