Leek Pastries with Soy Strips




Ingredients:

100 gr chopped leeks,
1 medium carrot,
2 tbsp olive oil,
50 gr. soy strips,
1 cup soy milk,
1 lime juice,
1 tsp sesame seeds,
1 tsp dried basil,
1 tsp black pepper,
1 medium chopped onion,
8 thin sheets of phyllo dough,
100 gr vegan cheese.


Method:

1.  Lightly fry onions, leeks, carrots, black pepper, salt and lemon juice in a little olive oil. Add 1 cup water and cook on high heat for 5-6 minutes. Set aside.



2. Cook dried soy strips in warm water for 4-5 minutes and strain. Transfer in to a pan and let to fry them for 2-3 minutes on medium high.

3. In a medium bowl, mix olive oil, soy milk and salt.

4. Grate vegan cheese in a bowl and set aside.

5. Place 1 sheet of phyllo dough on the bottom of the baking pan. Spread soy milk sauce until completely wet. 



6. Place a pinch of cheese, leek and soy strips. Roll out the pastry. ( or you can make triangles how you want to firm.)

7. Brush with soy milk sauce on top, spread basil and sesame.



8. Bake in preheat oven to 200 degrees until golden brown.
