Lentil Broccoli Detox Soup


1 tbsp olive oil,
1 cup red lentils,
3 large heads of broccolli
1 large black carrot,
1 tsp himalayan salt,
2-3 small mixed peppers,
1 kiwi,
1 lemon juice,
Fresh mint leaves.


1. Place broccoli, carrot and red lentils in a large pot and cover with warm water. Turn heat to high and bring to a boil.

2.  Simmer for 15 – 20 minutes. Soup is done when lentils are tender.

3. Taste soup, add salt as needed. Using an immersion blender puree until desired consistency.

4. Place lemon juice, kiwi, peppers, salt and olive oil an a food processor mix until smooth.

5. Add mixture into the soup. Mix and stir for 4-5 minutes.

6. Decorate with fresh mint leaves.
