Dreamy Vegan After Eight



1 small cup cashew pre-soaked,
1/2 cup coconut oil melted,
3 tbsp unsweetned soy milk,
4 tbsp raw blue agave syrup,
3 tbsp peppermint extract,
1 tbsp vodka,
1 tsp matcha powder ( if desired.)
1 ripe avocado


2 tbsp coconut oil,
1 tbsp cacao butter,
2 tbsp bitter chocolate flakes.


1. Cover cashews with water and let soak at least 2 hours. Then drain and rinse.

2. Place all filling ingredients with cashews in a food processor, mix on high speed until completely smooth.

3. Line a baking sheet in a pyrex, pour 1 tbsp mixture. Firm it how you desired or pour mixture in the icebox. Repeat the processor for all filling mixture. Put them into freezer at least 4-5 hours!.

4. Melt chocolate flakes, cacao butter and coconut oil in a small pot. Dip pepperment fillings in the chocolate sauce.  Cover and freeze for 1-2 hours or until chocolate layer is firmed.
