Pecan Pine Nuts Vegan Cheese


Ingredients:

5ml probiotic capsule,
1 cup cashews pre-soaked,
3 tbsp nutritional yeast,
3 tsp djon mustard,
1 tsp xhantan gum,
1 lemon juice,
1 tsp salt,
1 tbsp white truffle olive oil,
2 tbsp coconut oil,
1/2 tsp garlic puree,
A handful of  chives,

Toppings:

A handful of fresh thyme,
30 gr. pecan nuts,
25 gr. pine nuts,
1 tbsp dried blueberries,



Method:

1. Place all ingredients in a food processor, mix on high until completely smooth.

2. Transfer mixture on to the plastic wrap or baking sheet. Shape it, set aside.

3. Divide nuts and blueberries in two, mix with fresh thyme leaves. Press nuts into the surface. Reshape gently as needed.

4. Cover and place a small bowl. Put into refrigerate at least 3-4 hours until ready to serve.
