Quinoa Bulgur Pilaf



Ingredients:

1/2 cup 3 coloured quinoa,
1/2 cup bulgur,
1 cup warm water,
1 yellow and red california pepper,
1 green pepper,
1 tsp salt,
2 tbsp olive oil.
1 long leek,
1 tbsp tomato paste.

Topping:
Spinach leaves,
Pecan nuts.

Method:

1. Combine quinoa, water and bulgur in a medium sauce pan. Bring to boil, turn heat down to low. Cover and simmer until tender. It takes about 10-12 minutes.

2. Chop peppers and leek. In a large pan, add them with olive oil on medium heat until caramelized.

3. Add tomato paste and 3-4 tbsp water, stir contantly on medium heat for 2-3 minutes.

4. Transfer quinoa bulgur mixture into the pan. Stir until combined well.

5. Decorate with fried pecan nuts and spinach leaves if desired.
