Chocolate Covered Carrot Balls



2 medium carrots,
1/2 cup soy milk,
2 tbsp agave syrup,
3/4 cup oat rolled,
2 cup almond meal,
2 tsp cinnamon,
1 tsp nutmeg,
1 tsp cloves,
4 tbsp coconut flakes,
1/2 cup dried jujube.

Chocolate sauce:

2 tbsp coconut oil,
2 tbsp cacao butter,
1 tsp vanilla extract,
2 tbsp maple syrup,
1/4 cup raw cacao powder.


1. Place rolled oats in a blendar and mix on high for 1-2 minutes.

2. Add all other ingredients in a blendar and mix until smooth. If you get very soft dough, then add coconut flakes and almond meal. You should get medium soft mixture as below.

3. Make balls with your hands, put a nut in each ball and roll. Apply same process for the remaining dough.

4. In a bowl, melt coconut oil and cacao butter. Add all other chocolate ingredients in the bowl, whisk well.

5. Pour chocolate sauce over the balls.

6. Decorate with lingonberry or beet powder how you desired.

7. Place in a freezer for 10-15 minutes.
