Spiced Vegan Paella


1 medium onion chopped,
1 tsp garlic puree,
1 red & yellow pepper,
1 cup risotto rice,
1 medium carrot sliced,
2 cup water,
1 tbsp nutritional yeast,
2 tbsp olive oil,
1 vegetable stock,
1/2 cup sweet peas,
1 tsp paprika,
1 tsp turmeric,
1 tangerine juice,
A pinch of salt and pepper


1. Saute onion, garlic, carrot and peppers with olive oil in a pan on medium heat until translucent.

2. Add risotto rice, nutritional yeast, vegetable stock and 2 cup water, cook until tender.

3. Then add sweet peas, paprika, turmeric, tangerine juice, salt and pepper. Stir for 2-3 minutes on high heat.

4. Serve with broccoli, tangerine slices and pine nuts if desired.
