Sprouted Raw Salad



Ingredients:

50 gr lentil & mung bean sprouts,
100 gr. mesclun greens,
2 large kale leaves,
2 lolorosso leaves,
1 kiwi,
3-4 walnuts,
1 tsp sesame,
2 tbsp purple cabbage chopped,
1 tbsp olive oil,
1/2 pink radish sliced,
3-4 yellow cherry tomatoes,
2 tbsp pomegranate seeds ( if desired.)
1 tbsp gojiberry ( if desired.)



Dressing:

1/2 ripe avocado,
1 lemon juice,
1/2 ripe mango,
1 tsp curry,
1 tbsp maple syrup.


Method:

1. Wash all greens, drain and cut into small pieces. Place in a salad bowl.

2. Add purple cabbages, sliced pink radish, cherry tomato, kiwi and sprouts.

3. Spread sesame, pomegranate seeds and gojiberries.

4. Place avocado and 1/2 lime juice in a food processor, mix on high until completely smooth.

5. Place mango, curry, maple and 1/2 lemon juice in a food processor mix until fluffy.

6. Dress with olive oil, mango and avocado sauces, top with walnuts.
