Winter Grechka Salad



Ingredients:

1 cup grechka buckwheat,
1 cup warm water,
6-7 long endive,
3-4 long chinese cabbage leaves,
6-7 cherry tomatoes,
1 pink radish,
4-5 dried jujube,
2-3 Red leaf lettuces,
2-3 kale leaves,
1 cucumber,
2 tbsp pomegranate juice,
2 tbsp olive oil,
A pinch of salt,
1 lemon juice,
Fresh mint leaves.



Method:

1. Wash all greens and drain. Set aside.

2. Bring to boil grechka in a warm water. Then add olive oil, pomegranate juice, salt , sliced dried jujube and mint leaves. Stir for 1-2 minutes or until well combined.

3. Cut and place all greens in a salad bowl. Add 2-3 tbsp grechka mixture on top.  Serve cold!
