Zucchini patties with salsa


Zucchini balls:

2 small zucchini and carrot or 1 large, roughly grated
1 onion, chopped
2 tsp parsley puree
2 garlic cloves, pressed
1 dl wheat flour
1 tsp baking soda
1 tsp of ground coriander
A pinch of salt andblack pepper

Salsa sauce:
5 tomatoes cut into pieces,
1 red onion, chopped
1 yellow pepper, chopped
1-2 chili grapes or the desired strength, finely chopped
2 tablespoons rapeseed oil
½ dl chopped fresh coriander
A pinch of salt and black pepper


1. Grate zucchini and carrot well.

2. Squeeze the liquid out of the them and put in a bowl.

3. Add the all remaining ingredients in to the bowl and mix well with your hands until get a dough.

4. Form eight steaks and fry them in olive oil until the fritters have a nice color on both sides.

5. To make salsa sauce, heat the oven to 200 degrees. Mix tomatoes, red onions, peppers, chilli, rapeseed oil, salt and pepper in a furnace form.

6. Heat the oven about 20 minutes. Stir the salsa together so that the pieces are mashed and allowed to cool to room temperature.
