Spicy Chickpea & Kale w/ Avocado Sauce



Ingredients:

50 gr. kale leaves,
4 tbsp chickpea,
1 tsp red pepper flakes,
A pinch of salt,
A pinch of black pepper,
Homemade vegan bread slices,
1 tbsp vegan butter,
1 ripe avocado,
1 lime juice,
1 tbsp pecan nuts,
1 tsp sesame seeds.

Method:

1. Preheat oven to 175 degrees.  Place a baking sheet on to the baking pan.

2. Divide kale leaves in two or three pieces with your hands. Pour 1/2 tbsp olive oil onto the kale leaves and spread a pinch of salt. Bake for 8-10 minutes. Set aside.

3. Bring to boil chickpeas in a deep pot until cooked. Then transfer in a pan, add vegan butter, pepper flakes, salt and pecan nuts, mix until caramelized.

4. Place the avocado in to the food processor, add lime juice and a pinch of salt, mix on high until completely smooth.

5. Put a bread slices on a plate.

6. Pour avocado sauce on bread slices,  add kale laves on sauce and place chickpeas on top.

7. Sprinkle sesame seeds if desired. Serve cold or warm!
