Sweet and Sour Herby Couscous



Ingredients:

1 cup couscous (200gr.),
1 cup warm water,
1/2 small onion chopped,
A handful of chopped rosemary,
A handful of walnuts crushed,
1/2 cup chopped bell peppers,
5-6 cherry tomatoes,
1 medium cucumber,
1 heading tsp mustard,
1 tbsp agave syrup,
1 tsp salt,
1/2 tsp pepper,
1 lemon juice,
1 tbsp olive oil,
1 tsp garlic powder.




Method:

1. Wash and strain couscous, place in a pot. Pour warm water. Bring to boil until the it has swelled up and absorbed all of the water. Set aside.



2.  In a large pan, mix together olive oil, onion, walnuts, bell peppers, mustard, agave, salt, garlic, lemon juice and pepper on medium heat for 3-4 minutes until saauted and lightly browned.



3. Transfer couscous into the pan, cook for 2-3 minutes on medium heat.


4. Add small cutted cucumber and tomatoes into the pan. Toss with the couscous.



5. Spread rosemary over the couscous.

6. Serve warm or cold.
