Shiitake Quinoa Warm Salad





Ingredients:

100 gr. shiitake mushrooms,
1/2 cup strawberries,
2 chili pepper,
5 branch asparagus,
1/2 long leek,
1/2 dill,
1/2 cup quinoa,
1/4 cup green lentil,
2 tbsp soy sauce,
1 tbsp olive oil,
1/2 tsp ground garlic powder,
1/2 tsp mustard powder,
A pinch of thyme,
1 lime.


Method:

1. Place quinoa and green lentils in a pot, cover with water. Bring to boil on medium heat for 20 minutes.

2. In a large pan, add olive oil and soy sauce. Sauté sliced shiitakes, asparagus, leek and chili peppers on high heat stirring constantly.



3. When veggies are sautéed then add garlic powder, thyme, mustard powder, mix well.

4. When quinoa lentil mixture are cooked, strain, drain and add to the pan. Mix with veggies and cook for 1-2 minutes.



5. Add strawberry slices onto the pilaf. Serve warm with lime slices if desired.
