Broccoli Fritters


1 medium head broccoli ( 2 cups),

1/2 medium onion chopped,

2 tablespoon ground flaxseed + 6 tablespoon water,

1 medium jalapeno chopped,

2 cloves of garlic,

1/2 cup chickpea flour,

1 teaspoon salt,

1/2 teaspoon red pepper,

2 tablespoon olive oil to fry.


1. In a small bowl, mix flaxseed with water, place into refrigerator for 10 minutes.

2.Place broccoli, chopped onion, jalapeno, garlic,pepper and salt into the food processor. Mix on high speed. It looks like grains.

3. Then add chickpea flour and flaxseed mixture. Mix for 1-2 minutes.

4. Squeeze them like you are forming a dough.

5.Heat olive oil on medium in a large skillet. Form into patties and place in the skillet, reduce heat to low and cook fritters on each side for about 4-5 minutes until golden brown. These are lightly fried and not deep fried.

6. Serve with sour cream or guacamole sauce.
