FUNDAMENTALS OF RAW PASTRY CLASS

This course guides you through beginner modules to learn fundamentals of raw pastry.

For those who are new on raw pastry. If you’ve been experimenting with raw cakes for a while and want to get some practical advice and troubleshoot any issues you’ve had in the past, this course will give you the opportunity to learn right techniques and recipes with confidence.

What you will learn:

  • Theroretical information
  • Raw pastry mathematics
  • Introduction to raw ingredients and equipments
  • Learn how to create a variety of bases for your desserts, including brownie, short bread, marzipan
  • Principles of taste and flavour balancing
  • Learn how to make nut butter creams, salted caramel, chocolate, coulis, custard in the best consistency
  • Correct preparation and use of flours, sweeteners, fats, oils, acids, thickeners, binders, setting agents.
  • Learn the do’s and don’ts of raw cake making to avoid simple mistakes
  • Ending with one of my signature raw cake tasting

ADVANCED RAW PASTRY CLASS

In this course you will be master on raw chocolate, both cashew-based and nut-free raw cakes, balancing flavours and plating techniques.
It’s all about knowing the balance of ingredients and how to re-arrange them to meet your needs.

For those who are business owners or chefs.

This course guides you to improve your skills and move to next level with confidence.

  • Advanced flavour balancing
  • Making multiple layer raw cakes
  • Coating with buttercream and ganache
  • Tempering raw chocolate
  • Use of raw chocolate in raw cakes
  • Nut-free versions
  • Natural Colouring

HANDS-ON RAW PASTRY WORKSHOP

Discover health conscious and plant- based versions of the desserts while learning the very best techniques to bring them together. 

This hands-on workshop will guide you through an introduction to raw cake, detailing the key ingredients, equipment and methods that you need. 

We will make 2 cakes using different techniques in each one:

Triple Layer Raw Chocolate Vanilla Cake
Cinnamon Bun Raw Cake

You will take the cakes with you at the end of course and also a small course booklet including how-know’s and recipes.

NUT – FREE HANDS-ON RAW PASTRY WORKSHOP

If you find raw sweets too nut-heavy for your taste also quite heavy on the stomach, it is possible to lighten up the cashew layer with fruits, veggies and grains or completely remove nuts from raw cakes – that are still white in color and perfect in the texture.

This is very specific course, you will be learn to use some new ingredients that are not common in raw pastry.
For those who have nut allergy or want to add high-end nut-free raw cake options into their menu.
