220 gr. sweet potato spiralized
A handful of fresh parsley
A handful of raw walnuts
1 tbsp unroasted sesame seeds
For the sauce:
1 tbsp tahini
3 tbsp fresh lemon juice
1 tsp coconut aminos
1 tsp ginger grated
2 garlic cloves minced
1/4 tsp sea salt
1. Spiralize sweet potatoes and place in a large bowl. Set aside.
2. Place all sauce ingredients into blender, mix until smooth.
3. Pour the sauce in the bowl and toss to coat all the ingredients. Cover the bowl and let the flavors marinate at room temperature for 30 minutes.
4. Serve your noodle with sesame seeds and fresh parsley. Enjoy!
