Stevia, Xylitol, Erythritol – Sweetener Comparison


Stevia is a naturally presented sweetener that is extracted from the leaves of South American shrubs, scientifically known as Stevia rebaudiana.

This plant-based sweetener contains zero calories, can be 350 times sweeter than sugar and slightly different from sugar.
There are publications indicating that stevioside, a sweet compound of stevia, lowers blood pressure, blood sugar and insulin levels.
While stevia is generally considered safe, more up-to-date research is needed to determine if the natural sweetener is constantly beneficial for human health.

Just like xylitol, stevia has a slightly bitter taste, which is formed during extraction. It does not provide full performance in desserts. It can be used as an alternative to white table sugar, but it is not a product that can be used in the long term.


Erythritol is a type of sugar alcohol, just like sorbitol and xylitol.

Only 0.24 calories per gram of erythritol contains 6% of the normal sugar.

It also has tasting almost like sugar.

There are no enzymes in your body to break down the majority of erythritol, so most are absorbed directly into your bloodstream and are excreted unchanged in your urine.

Therefore, it does not appear to have the harmful effects of normal sugar.

Also, erythritol does not raise blood sugar, insulin, cholesterol, or triglyceride levels.

Despite the low calorie amount, a study on university students without obesity has linked erythritol blood levels with increased fat mass and weight gain.

The study also found that erythritol plays a role in metabolism because some people genetically create more erythritol than glucose than others.

However, it is unclear how consuming erythritol affects the body. More research is needed to determine if it contributes to weight gain.

Erythritol is generally considered safe as a sugar substitute for human consumption, but the commercial production of erythritol is time consuming and expensive, making it a less available option.


Xylitol is processed from trees like birch or a plant fiber called xylan. It is a refined sweetener.
Xylitol contains zero fructose and its glycemic index is 7. (normal white sugar 60-70) For this reason, it can be considered as a good alternative to table sugar.

When the xylitol is put into the mouth, the feeling of freshness is mentioned in the mouth, we are very uncomfortable with this burning sugar taste, in contrast to the freshness. The feeling of intensity that it gives your mouth as if it is spoonful of sugar is felt in desserts and it gives them the feeling of flavoring with something artificial.

In conclusion, based on our experience and research, we would like to state that we do not have these three products in our kitchen.
