For the noodle;
2 medium zucchini,
2 medium carrot,
1 large cucumber,
4 bunches of asparagus,
2 tbsp teriyaki marinade sauce,
1 tbsp olive oil,
1 fresh basil leave,
1 tsp sesame seeds
You can cook noodles with teriyaki marinade sauce as you can eat raw.
Here is the teriyaki marinade sauce ingredients;
1/2 cup soy sauce,
1 tbsp maple syrup,
2 tbsp rice vinegar,
2 tbsp sesame oil,
1 tbsp coconut sugar,
1 tsp garlic powder,
1 tsp ginger powder,
1 tbsp cornstarch,
1/4 cup water
1. Cut zucchini, carrot and cucumber by using spiral slicer. Set aside.
2. In a sauce pan, mix all sauce ingredients and bring to boil 2-3 minutes on high heat by stirring continuously.
3. Transfer spiralized noodles and cutted asparagus in to a pan and toss with teriyaki marinade sauce.
4. Add olive oil, mix them and place into a bowl or plate. Decorate with fresh basil leaves and sesame seeds.
You can serve it with fried tofu or vegan yogurt sauce if desired.
Fried tofu can be easily marinated with teriyaki sauce on medium heat for 2-3minutes.
