Zucchini Salad with Pine Nuts, Peas And Chili

If you are grilling zucchini then you will love this tasty appetizer with peas, pine nuts, chili and parmesan on top.

6 small zucchini (sliced lengthwise)
1/2 cup peas
2 tablespoons olive oil
2 red chilies (chopped and finely chopped)
1 tsp finely chopped smooth-leafed parsley
2 garlic cloves
15 g roasted pine nuts
2 lemons (squeezed juice)
40 g of parmesan
Salt and pepper


  1. Cut the zucchini lengthwise into thin strips with a mandolin or cheese grater. Brush the strips with 1 tablespoon of olive oil and grill with peas in turns on the grill for about 3-4 minutes on each side. Put aside.
  2. Mix chilli, parsley and garlic in a bowl along with pine nuts, lemon juice and 1 tablespoon olive oil. Pour over the zucchini and top with some parmesan flakes.

    Serving tip: Serve this salad with vegan schnitzel and sunflower cheese cream to turn it into perfect comfort food.
