Chimichurri with Wild Garlic and Tomato

An extra tasty variation on chimichurri is when you mix in the wild garlic with tomato. Wild garlic with its slightly green garlic flavor fits perfectly in a spicy chimichurri. Then the possibilities are endless, chimichurri can be served with basically anything! I like mine on the top of avocado, pasta or pizza.



Ingredients:

50 g finely chopped wild garlic
3 tbsp finely chopped shallot
1 tbsp finely chopped garlic
A handful finely chopped cherry tomatoes
1/4 cup finely chopped parsley
1 dl olive oil
2 tbsp lemon juice
2 tsp chili flakes
1 1/2 tsp salt

How to make?

  1. Peel and finely chop the shallots and garlic. Finely chop the wild garlic, tomato and parsley. Place them in a bowl.
  2. Add olive oil, lemon juice, salt and pepper. Toss together. Enjoy!
