Roasted Butternut Squash


300 gr. butternut squash,

4-5 shallot,

1 tablespoon olive oil,

2 teaspoon salt,

1 teaspoon ground mustard,

25 gr. pine nuts,

1 tablespoon chopped fresh rosemary,

1 tablespoon nutritional yeast,

1 teaspoon garlic powder


  1. Cut butternut squash into cubes, place into a bowl.
  2. Cut shallots in two, add to bowl.  Add salt, olive oil, mustard, nuts, nutritional yeast, garlic and rosemary.
  3. Mix with your hands well. And transfer mixture into baking tray with parchment paper.
  4. Pre-heat oven to 200 degrees. Bake in the oven for about 22-25 minutes or until roasted.
