300 gr. butternut squash,
1 tablespoon olive oil,
2 teaspoon salt,
1 teaspoon ground mustard,
25 gr. pine nuts,
1 tablespoon chopped fresh rosemary,
1 tablespoon nutritional yeast,
1 teaspoon garlic powder
- Cut butternut squash into cubes, place into a bowl.
- Cut shallots in two, add to bowl. Add salt, olive oil, mustard, nuts, nutritional yeast, garlic and rosemary.
- Mix with your hands well. And transfer mixture into baking tray with parchment paper.
- Pre-heat oven to 200 degrees. Bake in the oven for about 22-25 minutes or until roasted.
