Pear Walnut Crumble


Layer 1: Crust

1 cup rolled oats,

1 cup crushed walnut,

1/4 tsp salt,

2 tbsp coconut sugar,

2 tbsp vegan butter

Layer 2 :Filling:

3 medium pear cutted into small cubes,

2 tbsp coconut sugar,

1 tsp ground cinnamon,0

1 tbsp ground cardamom,

1/4 tsp sea salt,

1 tsp vanilla extract,

3 tbsp lemon juice,

1 tsp cornstarch

Layer 3: Crumble

3 tbsp coconut sugar,

3 tbsp almond meal,

1/2 cup rolled oats,

1 tbsp coconut oil


  1. Preheat oven to 180 degrees.
  2. Place a parchment paper into the baking pan.
  3. Place pear cubes into the bowl, add sugar, cinnamon, cardamom, salt, vanilla extract, lemon juice and cornstarch, toss together.
  4. Cover with foil and bake for about 15 minutes. Set aside.
  5. Place all layer 1 crust ingredients into the food processor, mix on high speed.
  6. Transfer mixture into the baking pan. Press down into an even layer with your hands.
  7. Open foil and spread pear mixture over the crust layer.
  8. Place all layer 3 crust ingredients into the food processor, mix on high speed and make crumble with your hands.
  9. Top with crumble topping.
  10. Place pan into the oven. Bake for 20-25 minutes or until golden browned. Serve with whipped coconut cream if desired.
