Ingredients:
Layer 1: Crust
1 cup rolled oats,
1 cup crushed walnut,
1/4 tsp salt,
2 tbsp coconut sugar,
2 tbsp vegan butter
Layer 2 :Filling:
3 medium pear cutted into small cubes,
2 tbsp coconut sugar,
1 tsp ground cinnamon,0
1 tbsp ground cardamom,
1/4 tsp sea salt,
1 tsp vanilla extract,
3 tbsp lemon juice,
1 tsp cornstarch
Layer 3: Crumble
3 tbsp coconut sugar,
3 tbsp almond meal,
1/2 cup rolled oats,
1 tbsp coconut oil
Method:
- Preheat oven to 180 degrees.
- Place a parchment paper into the baking pan.
- Place pear cubes into the bowl, add sugar, cinnamon, cardamom, salt, vanilla extract, lemon juice and cornstarch, toss together.
- Cover with foil and bake for about 15 minutes. Set aside.
- Place all layer 1 crust ingredients into the food processor, mix on high speed.
- Transfer mixture into the baking pan. Press down into an even layer with your hands.
- Open foil and spread pear mixture over the crust layer.
- Place all layer 3 crust ingredients into the food processor, mix on high speed and make crumble with your hands.
- Top with crumble topping.
- Place pan into the oven. Bake for 20-25 minutes or until golden browned. Serve with whipped coconut cream if desired.
